100%Whole wheat bread

Whole wheat bread available outside contains a lot of chemicals in the form of added gluten, binding agents, rising agents, gums etc...which are not good for health. 
Here is an easy recipe to make it at home without any additives. Make at home and enjoy the freshly baked bread.

Ingredients:

2 cups whole wheat flour
1 cup warm water
1 tsp active dry yeast
1 tbsp sugar
3 tbsp honey
1 tsp salt
2 tbsp butter/ghee
1 tsp milk

Procedure:

Dissolve sugar in the warm water and add yeast, stir and cover. Let it sit for 10 min to activate the yeast. Then add salt and honey and mix well.
Add 3/4th quantity(1.5 cups) of the flour in to the yeast mixture and just mix until the water is absorbed.
Do not knead at this time. Let it sit for 15 min so that the bran of the flour gets soaked and softens.
Then add the remaining 1/4th quantity of flour (0.5 cup) and start kneading until it forms a soft but non sticky dough. Use 1 tbsp of butter/ghee while kneading.
Now take a large bowl and grease it with the butter or ghee and place the soft dough, and brush top layer with some oil/ghee and cover the bowl with a damp cloth or cling film.
Let it rest till the dough becomes double its size.

After that take a loaf pan and grease it with some butter/oil/ghee.
Then take the dough out and slowly without kneading too much, shape it in to a loaf form and place it in the loaf pan. Brush the top layer with some milk and place it in the warm place for second raising.
Let the dough raise again to its double size or till the top of the loaf pan.

Preheat the oven at 180C and place a bowl of water at the bottom of the oven. It'll help the bread in remaining soft crusted.
Now place the loaf pan in the oven and bake it until done for 15 to 20 min(time varies from oven to oven). When you tap on the top of the baked bread it should sound hollow.
Then take it out of the oven, brush some butter on it and let it cool until it can be handled. Then take the bread out of the loaf and let it completely cool. After cooling cut into pieces, and use it fresh.

Healthy Bajra Biscuits(Pearl millet biscuits/sajja pindi biscuits)


Most of us think that cookies made of any flour other than maida/all purpose flour does not taste good. But this recipe can prove them wrong.
I made these cookies only with Bajra flour/sajja pindi/pearl millet flour, desi ghee, milk and sugar. They came up so tasty that i wanted to share them with everyone.

Ingredients:
3/4 cup Bajra Flour

1/4 cup Sugar
1/4 tsp baking powder
1 pinch salt
1 tbsp milk
1/4 cup ghee/butter
1 pinch cardamom powder.

Procedure:
Take all the dry ingredients in a mixing bowl. Mix them thoroughly. It is better if you sieve them once or twice so that they mix uniformly. 
Now take ghee, sugar and milk and beat with whisk or electric hand blender to make a fluffy and airy mixture.
Now add the dry ingredients to the ghee mixture to form a dough. Adjust milk accordingly.
Now if the dough is moist and sticky then place it in the freezer for 5 min. Or if the dough is not sticky, then directly start making into cookies.
Press and roll the dough carefully to desired thickness and cut them using a cookie cutter of desired shape.
Place them on a greased baking tray.
In the meanwhile preheat the oven at 180C. After the oven is preheated place the tray in the oven and bake for 10 to 12 min till they turn golden brown in colour. Remove from oven and let them cool and store them in an air tight container and enjoy.


Note: 
1. Temperature and time differs from oven to oven, so adjust them according to your oven.
2. Also you can add some vanilla essence for vanilla flavoured cookies.
3. Also You can replace 50% of the flour with whole wheat flour to make the dough rolling easy.

Quick and Easy Milk Cake(Kalakand) from chenna/paneer


Kalakad is a famous Indian Sweet made out of milk which involves a hours of preparation.
Here is a quick and easy way to make it.

Ingredients:

2 L Milk
2 tsp lemon juice.
100gm sugar
1/2 tsp cardamom powder

Procedure:

Boil the milk in a pan, when it starts boiling simmer the flame and add the lemon juice diluted in 2 tbsp of water slowly little by little.
Switch off the flame and stirr it, milk should curdle and the milk solids get separated and the light green coloured whey will be seen.
At this stage filter the milk solids from whey and take it aside. These milk solids is called chenna or  paneer.
Now take a heavy bottomed pan and put the chenna in to it and cook it on medium flame. When  it starts bubbling add the sugar and cardamom powder and cook until it starts leaving the sides and thickens. Take a bowl or plate or mould where we want to put the kalakand and grease it.
After the mixture starts leaving sides, switch off flame and transfer it in to the greased mould.
Press it with a spoon or with back of a glass to level it, and let it cool till it reaches room temperature and then keep in the refrigerator for 10 min.
After 10 min take it out from fridge and cut it and serve. EWnjoy quick and easy Kalakand.

Rich Chocolate Chunks and Nuts Whole Wheat Cookies


Chocolate chunky cookies are the kids' most favourite and loved cookies which has big chocolate chunks that melt in mouth.
This recipe has chocolate in 3 forms that is cocoa powder, chocolate chips and big chocolate chunks and also some nuts of cashew and almond. So only these cookies are the richest ones.
Below is the text and video recipe.
Ingredients:
1cup/130 gm Whole wheat Flour
1/4 cup milk powder
3 tbsp Sugar
1/2 tsp baking powder

2 tbsp milk
1/4 cup ghee/butter
3 tbsp each of Cashewnut and Badamchunks
1 tbsp cocoa powder
1/4 cup each of chocolate chips and big chocolate chunks
Few drops of vanilla extract

Procedure:

Take ghee, suagr, vanilla and 1 tbsp milk and whisk till sugar is dissolved and looks fluffy and light.
Add cocoa powder and mix.
Now add the sifted flour and baking powder and mix gently to form a crumbly mixture.
Add all the nuts and choco chips and mix. Now add the milk powder and mix and then add the big chocolate chunks and mix and add 1-2 tbsp milk if required to form a cookie dough. Place in the freezer for 10-15 min.
In the meanwhile preheat the oven at 180C. 
Grease the baking tray and line with parchment paper and grease it also.
Make equal size cookies from the dough and place them on the tray.
After the oven is preheated place the tray in the oven and bake for 10 to 12 min till they are baked properly. Remove from oven and let them cool and store them in an air tight container and enjoy.

Healthy Whole wheat and nuts cookies

Most of us think that cookies made of any flour other than maida/all purpose flour does not taste good. But this recipe can prove them wrong.
I made these cookies only with Whole wheat flour, nuts, desi ghee and milk powder. They came up so tasty that i wanted to share them with everyone.

Ingredients:
1cup/130 gm Whole wheat Flour
1/2 cup/55gm milk powder
1 tsp Sugar
1/2 tsp baking powder
1 pinch salt
2 tbsp milk
1/4 cup ghee/butter
1 tbsp each of Pista and Badam shavings(finely sliced)

Procedure:
Take all the dry ingredients in a mixing bowl. Mix them thoroughly. It is better if you sieve them once or twice so that they mix uniformly. 
Then add the butter/ghee and gently rub against the flour with the finger tips to form a bread crumb texture.
Now add nuts to it and mix once.
Now add enough milk around 2 tbsp depending on the moisture content to make a dough. Do not knead the dough. Just gently mix to form a dough.
Now if the dough is moist and sticky then place it in the freezer for 5 min. Or if the dough is not sticky, then directly start making into cookies.
Roll the dough to 4 mm thickness and cut it in to circles.
Now make the good day cookies like arc design on them using a tumbler or glass.
Place them on a greased baking tray and place it in the freezer for 5 to 10 min.
In the meanwhile preheat the oven at 180C. After the oven is preheated place the tray in the oven and bake for 10 to 12 min till they turn golden brown in colour. Remove from oven and let them cool and store them in an air tight container and enjoy.


Note: 
1. Temperature and time differs from oven to oven, so adjust them according to your oven.
2. If you want to make for your kids and want to make them very rich you can increase the quantity of butter to 50 gm and sugar to 3 tbsp. This recipe also gives very tasty cookies eventhough the butter and sugar added are less.
3. Also you can add some cardamom powder or vanilla essence for flavoured cookies.
4. Also You can replace 50% of the flour with oats flour.




 


Good day like Oats and Nuts Cookies (100% Oats cookies with pista and badam)

Ingredients:
60 gm Oats Flour(Finely Ground Oats)
25 gm milk powder
2 tbsp Sugar
1/4 tsp baking powder
1/2 pinch salt
1 tbsp milk
25 gm ghee/butter
1 tbsp each of Pista and Badam shavings(finely sliced)

Procedure:
Take all the dry ingredients in a mixing bowl. Mix them thoroughly. It is better if you sieve them once or twice so that they mix uniformly. 
Then add the butter/ghee and gently rub against the flour with the finger tips to form a bread crumb texture.
Now add nuts to it and mix once.
Now add enough milk around 1 tbsp depending on the moisture content to make a dough. Do not knead the dough. Just gently mix to form a dough.
Now if the dough is moist and sticky then place it in the freezer for 5 min. Or if the dough is not sticky, then directly start making into cookies.
Make equal portions of the dough and make balls. You can use a weighing scale to divide equally. My dough is divided into 16 gm balls. But it can be done approximately too.
Now press the balls and make disc like shape without any cracks. Now make the good day cookies like arc design on them using a tumbler or glass.
Place them on a greased baking tray and place it in the freezer for 5 to 10 min.
In the meanwhile preheat the oven at 180C. After the oven is preheated place the tray in the oven and bake for 10 to 12 min till they turn golden brown in colour. Remove from oven and let them cool and store them in an air tight container and enjoy.

Indian way of making mexican tacos

Tacos are actually mexican snack in which taco shells are filled with baked beans and some vegetables ike lettuce, onion etc and topped with some sauces and salsa etc.
Here is a recipe to make tacos in Indian and simple way. Here I am using taco shells made of corn and wheat flour, Green chutney as a sauce, dal makhani instead of baked beans, sliced marinated onion.

Ingredients:
Tacos:
1 cup of corn flour
1/2 cup of whole wheat flour
warm water to make dough
salt to taste
oil for deep frying/baking.
Filling and Toppings:
Sliced Onion
Dal Makhani / Rajma masala/ Chole masala/chana masala curry
Green Chutney: 1 cup mint leaves, 1/4 cup coriander leaves, salt to tase, 3 green chillies, 1 tbsp curd/thick yogurt, 1/2 tsp lemon juice
For Marination: 1 tbsp lemon juice, 1/1 tsp pepper powder, pinc of salt.
 
Procedure:
Taco Shells:

Mix corn and whole wheat flour along with salt. Now add 2 tsp of oil and rub the flour. Now make a dough using warm water which is neither too hard nor too soft. Rest the dough for 30 min.
Now roll the dough in to thin sheets and cut the circles of 10 cm dia out of it. While rolling the dough has to be handled carefully. You can also roll it between 2 sheets of greased cling film. Also you may press it using puri press/roti maker.
  

Deep fry them in oil handling carefully same like we deep fry the puri. Now immediately after it is fried take it in to a tissue paper and press it with a rolling pin/belan to form the taco shell.

Green Chutney: Grind all the ingredients mentioned for green chutney in to smooth saucy consistency.
Curry/Filling: I used dal makhani curry here. You can use chole masala or rajma masala curry also.
Marinated Onion: Marinate the sliced onion rings in lemon juice, salt and pepper powder for 10 min.
Now fill the taco shell with the curry.

 Top it with the marinated onions.
Now top it with green chutney.
Yummy and crispy tacos are ready with desi twist.
