100%Whole wheat bread

Whole wheat bread available outside contains a lot of chemicals in the form of added gluten, binding agents, rising agents, gums etc...which are not good for health. 
Here is an easy recipe to make it at home without any additives. Make at home and enjoy the freshly baked bread.

Ingredients:

2 cups whole wheat flour
1 cup warm water
1 tsp active dry yeast
1 tbsp sugar
3 tbsp honey
1 tsp salt
2 tbsp butter/ghee
1 tsp milk

Procedure:

Dissolve sugar in the warm water and add yeast, stir and cover. Let it sit for 10 min to activate the yeast. Then add salt and honey and mix well.
Add 3/4th quantity(1.5 cups) of the flour in to the yeast mixture and just mix until the water is absorbed.
Do not knead at this time. Let it sit for 15 min so that the bran of the flour gets soaked and softens.
Then add the remaining 1/4th quantity of flour (0.5 cup) and start kneading until it forms a soft but non sticky dough. Use 1 tbsp of butter/ghee while kneading.
Now take a large bowl and grease it with the butter or ghee and place the soft dough, and brush top layer with some oil/ghee and cover the bowl with a damp cloth or cling film.
Let it rest till the dough becomes double its size.

After that take a loaf pan and grease it with some butter/oil/ghee.
Then take the dough out and slowly without kneading too much, shape it in to a loaf form and place it in the loaf pan. Brush the top layer with some milk and place it in the warm place for second raising.
Let the dough raise again to its double size or till the top of the loaf pan.

Preheat the oven at 180C and place a bowl of water at the bottom of the oven. It'll help the bread in remaining soft crusted.
Now place the loaf pan in the oven and bake it until done for 15 to 20 min(time varies from oven to oven). When you tap on the top of the baked bread it should sound hollow.
Then take it out of the oven, brush some butter on it and let it cool until it can be handled. Then take the bread out of the loaf and let it completely cool. After cooling cut into pieces, and use it fresh.

Healthy Bajra Biscuits(Pearl millet biscuits/sajja pindi biscuits)


Most of us think that cookies made of any flour other than maida/all purpose flour does not taste good. But this recipe can prove them wrong.
I made these cookies only with Bajra flour/sajja pindi/pearl millet flour, desi ghee, milk and sugar. They came up so tasty that i wanted to share them with everyone.

Ingredients:
3/4 cup Bajra Flour

1/4 cup Sugar
1/4 tsp baking powder
1 pinch salt
1 tbsp milk
1/4 cup ghee/butter
1 pinch cardamom powder.

Procedure:
Take all the dry ingredients in a mixing bowl. Mix them thoroughly. It is better if you sieve them once or twice so that they mix uniformly. 
Now take ghee, sugar and milk and beat with whisk or electric hand blender to make a fluffy and airy mixture.
Now add the dry ingredients to the ghee mixture to form a dough. Adjust milk accordingly.
Now if the dough is moist and sticky then place it in the freezer for 5 min. Or if the dough is not sticky, then directly start making into cookies.
Press and roll the dough carefully to desired thickness and cut them using a cookie cutter of desired shape.
Place them on a greased baking tray.
In the meanwhile preheat the oven at 180C. After the oven is preheated place the tray in the oven and bake for 10 to 12 min till they turn golden brown in colour. Remove from oven and let them cool and store them in an air tight container and enjoy.


Note: 
1. Temperature and time differs from oven to oven, so adjust them according to your oven.
2. Also you can add some vanilla essence for vanilla flavoured cookies.
3. Also You can replace 50% of the flour with whole wheat flour to make the dough rolling easy.
